Pre-cooked flours in the frozen and chilled bakery food
We did a study to inprove all frozen and chilled bakery food. We understoood that the using of pre-cooked flour inproves the quality of frozen and chilled products espacially:
- frozen and chilled bakery food stay crispy in the crust and soft in the crumb;
- it improves the crumb structure in particular in the bakery food with added of fibers or whole flour;
- it reduces the loss of water during the baking, cooling and freezing;
- it improves the color and the flavor of the crust and so it allows to reduce using of processing aids, dough conditioners and malt;
- It is a clean-label substitute of modify (eg:E1450 or E1442) and pre-cooked starches:
